Although they're side games and I don't know where to put them, I do really like Sonic R and Sonic the Fighters.
As for what game is my least favorite, I don't necessarily have one, but some that I put a bit lower than the others include Sonic Boom Rise of Lyric and Sonic Colors (because I keep forgetting it exists).
EDIT: Although I do like Riders and Riders Zero Gravity, I do hold a strong vendetta against Free Riders for a couple of reasons. First of all, it's a full-body motion control game exclusive to the Kinect (who's idea was that?), and second, VECTOR IS A MEMBER OF TEAM ROSE AND IT HURTS ME.

It's kinda rough since I haven't really ever played much of Sonic games apart from SA2B.

favorites are 2, locked-on sonic 3, sonic cd, sab2 (though it's kinda drab when in your late 20s, the main game i mean), spinball, heroes, generations, sonic advance 2, 4: part two, and this is wild so strap in--sonic riders and zero gravity and now mania and shadow. now hear me out: presentation and applied mechanics are an utter joke. the game is bad. but the actual premise and stage variety are some of the most unique in the series even though executed like a wild west hanging. i also liked unleashed. mediocre, but the night segments added a little meat to the bland day aesthetics and day's thoughtless on-rails design
worst has to be forces, sonic rush, lost world, and anything game gear. that portable was a mistake. 4: part one, adventure, the storybook.
i ain't counting unfinished games--those are just games you can use to avoid actually criticizing the franchise in public. me i'm a call it as i see it kinda woman. also some games i didn't mention just didn't leave an impression on me either way. like colors, it's kinda there. or shuffle, nothing to offer now except nostalgia.

Sonic 1 and 3 aren't enjoyable to me at all, they're boring and difficult. The only thing i like about them is 1's good music and 3 introducing Knuckles.

Like, i've pretty much always hated it. I've actually had it since i was really little, but upon replaying it multiple times i can never enjoy it.
That and Fortnite are my 2 least favorite games of all time, gameplay wise at least.

you can't have much exposure to gaming if those are your threshold for difficult. as for being "boring," 2D sonic games have the same bones: are we talking level design, mechanics, blue sphere make you break your mom's favorite vase--what? i'm curious. though looking at your favorites i can't say i'm shocked. oh well

Lmao "not much exposure"? Guess playing video games almost my entire life means I've not played much games.
Some games just aren't people's style. The classic games aren't my style. Sitting and playing them for 10 minutes gets me angry because of how stupid some of the levels are (especially in Sonic 1) and i just can't play them for too long without wanting to play something else.
Oh well, being on a Sonic fan forum, can't say i'm surprised by that response.
While I'm not all that fond of 16-bit Sonic 1 either, calling it and S3K garbage seems a bit harsh. Granted, even as someone who really enjoyed S3K, I also think claims of it being the "best of all time" are overselling it and can totally understand someone not enjoying it.
Anyways, as it's hard to pick favorites and hard to compare games from different eras with anything approaching objectivity, I'll just list my favorite and least favorite per system:
Genesis(including Sega CD and 32X):
Favorite: S3K
Unfavorite: 3D Blast
GameGear/Master System(counting these together as many games were released on both):
Favorite: Tails' Adventures(Triple Trouble if it has to be a game with Sonic in it).
Unfavorite: Probably the Drift Games, but discounting those, Labyrinth.
Dreamcast/Gamecube(Counting these together as most of the Dreamcast titles were ported to Gamecube an I've never played a Dreamcast also excluding collections):
Favorite: SA2B
Unfavorite: Heroes(Note: this was the last Console Sonic I played and I still enjoyed it, just not as much as the Adventure games).
GBA:
Favorite: Toss-up between Advance 2 and Battle
Unfavorite: Advance 1
DS:
Favorite: Rush Adventure.
Unfavorite: Rush
Sonic R and Rivals 2 are the only Saturn and PSP Sonic games I've played, and even then, I've only played the PC version of R and I'm pretty sure the only other Saturn Sonic game was Jam.
In hindsight, I probably shouldn't have put both Rise of Lyric and Free Riders in my lower tier category since at the time I had never actually played either of them, and while I still haven't played Free Riders due to me not owning any of the components required to play it, I have since played Rise of Lyric and actually had a (mostly) good time with it.
Also, I think if I had to re-do my top 10, the order would probably be something like this...
1. Sonic Adventure 2: Battle
2. Sonic Adventure DX
3. Sonic 06
4. Shadow the Hedgehog
5. Sonic Heroes
6. Sonic Unleashed
7. Sonic Forces
8. Sonic Generations
9. All the classics grouped together (1, 2, 3 AND KNUCKLES, CD, Knuckles' Chaotix, 3D Blast, Mania)
10. Sonic Lost World
(Note that this order is subject to change, and I could probably make a more accurate one if I had spent more time with it)
